Catalina Chicken

Fast & Easy – double it and freeze one for later!

We LOVE LOVE LOVE this one. It is my ‘go-to’ for bringing a freezer meal for friends who need a blessing. Dump it in the crock pot thawed…or frozen and in a few yours it’s ready.

I often make two at one time. One for now, freeze one for later.

  • 1 packet onion soup mix
  • 1 can whole berry cranberry sauce
  • 1/2 of a 16oz bottle (~8oz) California Style French Dressing (aka Catalina)
  • 1 – 2 pounds boneless, skinless chicken breasts

In your freezer bag (or directly in the crock pot) add the soup mix, cranberry sauce and salad dressing. Stir to mix and then add in the chicken breasts. Cook on low for 6-7 hours or high for 3-4 hours.

We love to serve ours over rice and serve broccoli on the side.

If you are making this in the freezer bag, really mix the wet ingredients well before adding the chicken to prevent the soup mix from sticking to the bag when you dump it out.
